Ultimate Creamy Mushroom Soup Recipe

Warm, rich, and full of earthy mushroom flavor this Creamy Mushroom Soup is the perfect cozy comfort meal. Made with fresh mushrooms, garlic, herbs, and cream, it’s a hearty vegetarian soup you’ll want on repeat!

 

Ingredients:

1 lb (450g) fresh mushrooms, sliced

1 medium onion, chopped

2 cloves garlic, minced

4 cups vegetable broth

1 cup heavy cream

2 tbsp olive oil

1 tsp dried thyme

Salt and black pepper, to taste

Fresh parsley, for garnish

 

Instructions:

1. In a large pot, heat olive oil over medium heat. Add chopped onion and sauté until translucent (about 5 minutes).

2. Stir in minced garlic and cook for 1 more minute until fragrant.

3. Add sliced mushrooms and cook for 8–10 minutes, until browned and their liquid has evaporated.

4. Season with thyme, salt, and pepper.

5. Pour in the vegetable broth and bring to a gentle boil. Reduce heat and simmer for 15 minutes to blend flavors.

6. Use an immersion blender to puree the soup until smooth (or leave it a little chunky by reserving some mushrooms before blending).

7. Stir in the heavy cream and gently heat through (do not boil). Adjust seasoning as needed.

8. Serve hot, garnished with fresh parsley. Enjoy!
