    Ultimate Cheesy Stuffed Meatloaf Recipe

     

    Looking for a juicy and flavorful meatloaf recipe that’s packed with melty cheese and baked to perfection? This Cheesy Stuffed Meatloaf is the ultimate comfort food dinner oozing with mozzarella, cheddar, and cream cheese, and topped with a tangy ketchup glaze. Perfect for family meals, potlucks, or cozy weeknight dinners!

    Ingredients:

    For the Meatloaf Base:

    1½ lbs ground beef (80/20 for best flavor)

    ½ cup breadcrumbs

    1 large egg

    1 small onion, finely chopped

    ¼ cup milk

    2 cloves garlic, minced

    ½ cup chopped bell pepper (optional for added flavor)

    1 tsp Worcestershire sauce

    1 tsp salt

    ½ tsp black pepper

    1 tsp Italian seasoning (optional)

    For the Cheesy Filling:

    1½ cups shredded mozzarella cheese

    ½ cup shredded cheddar cheese

    ¼ cup cream cheese, softened

    1 tbsp fresh parsley (optional for garnish)

    For the Glaze Topping:

    ½ cup ketchup

    1 tbsp brown sugar

    1 tbsp Dijon mustard

    Instructions:

    Step 1: Mix the Meatloaf

    Preheat oven to 375°F (190°C).
    In a large bowl, mix together ground beef, breadcrumbs, egg, onion, garlic, milk, Worcestershire sauce, salt, pepper, and Italian seasoning until well combined.

    On parchment paper or plastic wrap, shape the meat mixture into a flat rectangle (approx. 12×6 inches).

    Step 2: Add the Cheese Filling

    In a separate bowl, mix mozzarella, cheddar, and cream cheese together.
    Spread the cheese mix evenly across the center of the meat rectangle.
    Roll the meatloaf up carefully, sealing the cheese inside and pinching the edges closed.

    Step 3: Bake

    Transfer to a baking dish or sheet pan.
    Bake for 45–60 minutes, or until the internal temperature reaches 160°F (71°C).

    Step 4: Glaze and Finish

    Mix the ketchup, brown sugar, and Dijon mustard for the topping.
    15 minutes before the meatloaf is done, brush the glaze over the top.
    Continue baking until the topping is caramelized and golden.

    Step 5: Rest and Serve

    Let the meatloaf rest for 10 minutes before slicing.
    Serve with mashed potatoes, roasted veggies, or a fresh garden salad.
