    Tuscan-Style Slow-Cooked Beef Roast Recipe: Perfect for Cozy Dinners

    Looking for a comforting, flavorful meal? This Tuscan-Style Slow-Cooked Beef Roast is a must-try! With tender beef chuck roast and a medley of Italian-inspired flavors, this dish is ideal for family dinners, Sunday roasts, or meal prepping. Simply prepare, let it cook, and enjoy a rich, hearty meal.

    Ingredients:

    3 lb beef chuck roast

    Salt and pepper, to taste

    2 tbsp olive oil

    1 onion, chopped

    4 garlic cloves, minced

    1 cup carrots, sliced

    1 cup celery, sliced

    1 can (14.5 oz) diced tomatoes

    1 cup beef broth

    1 tsp dried rosemary

    1 tsp dried thyme

    1 tsp dried basil

    ½ cup kalamata olives, pitted and halved (optional)

    Instructions:

    1. Season the beef chuck roast with salt and pepper.

    2. In a large skillet, heat olive oil over medium-high heat. Sear the beef roast on all sides until browned, locking in the flavor.

    3. Transfer the roast to a slow cooker. Add chopped onion, garlic, carrots, celery, diced tomatoes, beef broth, rosemary, thyme, and basil for a burst of Tuscan flavor.

    4. Cover and slow cook on low for 8 hours until the beef is tender and can be shredded with a fork.

    5. For an extra touch, stir in kalamata olives during the last 30 minutes of cooking.

    Serve this Tuscan beef roast over mashed potatoes or with crusty bread for a satisfying meal that soaks up every bit of the rich sauce.
