    Tropical Hawaiian Pineapple Coconut Lush Recipe

     

    Tropical Hawaiian Pineapple Coconut Lush Recipe

     

    The Hawaiian Pineapple Coconut Lush is a delightful tropical dessert that perfectly blends sweet pineapple and creamy coconut flavors. Its crunchy macadamia nut crust adds a satisfying texture, making it irresistible. This refreshing treat is ideal for summer gatherings, barbecues, or any festive occasion. With its vibrant layers and easy preparation, it promises to transport your taste buds to a sunny island paradise. Serve chilled for a light, satisfying dessert everyone will love!

    Ingredients:

    1 3/4 cups Vanilla Wafer Crumbs

    1/2 cup Macadamia Nuts, roughly chopped

    1/3 cup White Chocolate Chips

    1/2 cup Sweetened Flaked Coconut, divided

    1/2 cup Butter, melted

    2 (8 oz) packages Cream Cheese, softened

    1 cup Powdered Sugar

    1 (8 oz) can Crushed Pineapple, drained

    1 (16 oz) container Frozen Whipped Topping, thawed, divided

    2 (3.4 oz) boxes Instant Coconut Pudding Mix

    4 cups Whole Milk or Half & Half

    16 Maraschino Cherries with Stems

    Instructions:

    Prepare the Crunchy Macadamia Crust:

    Preheat oven to 350°F (175°C). Lightly grease a 13 x 9-inch baking dish.

    In a bowl, mix vanilla wafer crumbs, macadamia nuts, white chocolate chips, 1/4 cup of flaked coconut, and melted butter until combined.

    Press the mixture into the bottom of the prepared dish and bake for 20-25 minutes or until golden. Allow it to cool completely.

    Toast the Coconut:

    Set the oven to broil.

    Spread the remaining 1/4 cup of flaked coconut on a baking sheet and broil for 4-5 minutes, stirring occasionally until golden brown. Cool completely.

    Creamy Pineapple Layer:

    In a medium bowl, beat softened cream cheese with powdered sugar until smooth.

    Fold in the drained crushed pineapple and 1/3 of the whipped topping.

    Spread this mixture evenly over the cooled crust.

    Coconut Pudding Layer:

    In another bowl, whisk together the coconut pudding mix and milk until thick but pourable.

    Pour the pudding mixture over the pineapple-cream cheese layer.

    Topping and Garnishing:

    Spread the remaining whipped topping over the pudding layer.

    Garnish with toasted coconut and 16 maraschino cherries for a festive finish.

    Chill:

    Refrigerate for at least 4 hours to set before serving. Cut into squares and enjoy this tropical Hawaiian dessert!
