    Tropical Hawaiian BBQ Chicken Foil Packets Recipe

    Ingredients:

    – 2 lbs Chicken Breasts (about 4 breasts)
    – 2 Bell Peppers (any color), diced into big pieces
    – ½ cup Barbecue Sauce
    – 2 Tbsp Soy Sauce
    – 4 slices Pineapple Rings (fresh or canned)
    – ½ tsp Salt
    – ½ tsp Pepper

     

     

    Directions:

    1. Prepare the Sauce: In a small bowl, combine barbecue sauce, soy sauce, salt, and pepper, ensuring thorough blending of flavors.
    2. **Prep the Grill or Campfire:** Heat your grill to medium heat or set up your campfire for cooking, ensuring it’s ready for use.

    3. Create Foil Packets:Tear off 4 large pieces of heavy-duty aluminum foil and lightly coat them with non-stick cooking spray to prevent sticking. Place a chicken breast fillet in the center of each foil piece.
    4. **Layer the Ingredients:** Arrange a pineapple slice and diced bell peppers on top of each chicken breast, distributing them evenly among the foil packets.
    5. **Add Sauce:** Drizzle approximately 1/4 cup of the barbecue mixture over each chicken foil packet, ensuring thorough coating.

    6. Seal the Packets: Fold the edges of the foil to create tightly sealed packets, preventing any leakage of juices during cooking and preserving flavors.

     

    7. Cooking Process:** Place the foil packets on the grill or campfire and cook for approximately 20 to 25 minutes until the chicken is fully cooked, reaching an internal temperature of at least 165°F (75°C).
    8. Serving:Carefully open the foil packets, avoiding hot steam, and transfer the contents onto serving plates. Serve immediately and enjoy the tantalizing taste of Hawaiian-style barbecue chicken!
