    Ingredients for Chicken Seasoning:

    4 tablespoons mayonnaise

    Juice from half a lemon

    Fresh parsley (to taste)

    3 cloves garlic, chopped

    1 tablespoon salt

    For the Chicken Dish:

    1 kg chicken thighs (or chicken breasts or drumsticks)

    Olive oil for spreading

    1 potato, sliced

    Instructions:

    1. Prepare the Chicken Seasoning:

    In a blender, combine mayonnaise, lemon juice, parsley, garlic, and salt. Blend until smooth and well-combined, creating a creamy chicken marinade.

    2. Marinate the Chicken:

    Arrange the chicken thighs on a baking sheet. Pour the seasoning over the chicken, ensuring it is evenly coated. Cover and marinate for at least 30 minutes (or up to an hour for a deeper, richer flavor).

    3. Prepare for Baking:

    Preheat your oven to 380°F (190°C). Spread a light layer of olive oil in a baking dish. Arrange the marinated chicken thighs and sliced potatoes in the dish.

    4. Bake the Chicken:

    Cover the dish with foil and bake for 1 hour. Remove the foil and bake for an additional 20 minutes, until the chicken is crispy and golden brown.

    5. Serve and Enjoy:

    Let the chicken rest for a few minutes before serving. Serve with roasted potatoes and a side salad or steamed vegetables for a complete meal.

    Tips:

    Adjust the seasoning to your taste for a more customized flavor.

    Add a pinch of red pepper flakes for a spicy kick.

    You can use bone-in or boneless chicken thighs, skin-on or skinless depending on your preference.
