    ½ cup fresh cilantro or basil, for garnish
    Lime wedges, for serving

    Directions:

    Heat coconut oil in a large pot over medium heat. Add sliced onion, garlic, and ginger. Sauté for about 3 minutes until fragrant and softened.

    Stir in the red curry paste and cook for 1–2 minutes to release its bold, Thai-inspired flavors.

    Pour in the coconut milk, broth, fish sauce (or soy sauce), and lime juice. Mix well and bring to a gentle simmer for a rich, flavorful base.

    Stir in the bell pepper and mushrooms. Cook for 5 minutes until tender and infused with the curry broth.

    Place the rice noodles directly into the pot. Cook according to package instructions until soft and immersed in the creamy soup.

    Ladle into bowls and top with fresh cilantro or basil. Add lime wedges for a bright, citrusy finish.
