1 lb boneless, skinless chicken thighs, diced
1 tbsp vegetable oil
1 small onion, thinly sliced
3 garlic cloves, minced
1 tbsp fresh ginger, minced
2 tbsp Thai red curry paste
1 can (13.5 oz) full-fat coconut milk
1 tbsp fish sauce
1 tbsp soy sauce
1 tbsp brown sugar
1 red bell pepper, thinly sliced
1 cup Thai basil leaves, loosely packed
Steamed jasmine rice, for serving
How to Make Thai Chicken Curry with Basil
1. Sauté aromatics: Heat oil in a large cooker or deep skillet over medium heat. Add onion, garlic, and ginger. Sauté for 2–3 minutes until fragrant.
