1 lb boneless, skinless chicken breast, cut into 1-inch cubes
½ cup teriyaki sauce
¼ cup pineapple juice
1 tbsp cornstarch
1 tbsp vegetable oil
4 large bell peppers (any color)
1 cup cooked white rice
1 cup diced pineapple
¼ cup chopped green onions
Salt and pepper, to taste
Sesame seeds (optional garnish)
Instructions:
1. Marinate the Chicken:
In a bowl, mix chicken cubes with teriyaki sauce, pineapple juice, and cornstarch. Toss to coat evenly. Refrigerate for 30 minutes to 2 hours to soak in flavor.
2. Sauté the Chicken:
In a large skillet over medium-high heat, add vegetable oil and cook the marinated chicken for 5–7 minutes, until browned and fully cooked.
3. Prep the Bell Peppers:
