Ingredients:

1 lb boneless, skinless chicken breast, cut into 1-inch cubes

½ cup teriyaki sauce

¼ cup pineapple juice

1 tbsp cornstarch

1 tbsp vegetable oil

4 large bell peppers (any color)

1 cup cooked white rice

1 cup diced pineapple

¼ cup chopped green onions

Salt and pepper, to taste

Sesame seeds (optional garnish)

 

Instructions:

1. Marinate the Chicken:
In a bowl, mix chicken cubes with teriyaki sauce, pineapple juice, and cornstarch. Toss to coat evenly. Refrigerate for 30 minutes to 2 hours to soak in flavor.

2. Sauté the Chicken:
In a large skillet over medium-high heat, add vegetable oil and cook the marinated chicken for 5–7 minutes, until browned and fully cooked.

3. Prep the Bell Peppers:
Preheat oven to 375°F (190°C). Cut the tops off the bell peppers and remove seeds and membranes.

4. Prepare the Rice (if not already cooked):
Bring chicken broth to a boil, add rice, reduce heat, cover, and simmer for 15–20 minutes until fluffy and liquid is absorbed.

5. Make the Filling:
In a large bowl, combine cooked chicken, rice, diced pineapple, and green onions. Season with salt and pepper.

6. Stuff the Peppers:
Fill each bell pepper with the chicken and rice mixture. Arrange them in a baking dish.

7. Bake:
Bake the stuffed peppers for 20–25 minutes or until the peppers are tender and the filling is heated through.

8. Garnish & Serve:
Top with sesame seeds and extra green onions for added crunch and color.
