Tender Halal Pot Roast with Carrots and Potatoes

Ingredients:

3 lbs Halal-certified beef chuck roast

2 tablespoons olive oil

1 large onion, chopped

3 garlic cloves, minced

3 large carrots, peeled and cut into chunks

4 medium potatoes, peeled and quartered

Salt and black pepper, to taste

2–3 cups water or beef broth (low-sodium recommended)

Instructions:

  1. Preheat your oven to 300°F (150°C) for a low and slow roast.
  2. In a large oven-safe pot or Dutch oven, heat olive oil over medium heat.
  3. Season the beef chuck roast with salt and pepper, then sear on all sides until beautifully browned. This locks in flavor and juices.
  4. Remove the roast and set it aside.
  5. In the same pot, sauté chopped onions and garlic until fragrant and soft.
  6. Add the carrots and potatoes, stirring gently for 2–3 minutes to enhance flavor.
  7. Place the beef roast back into the pot, nestling it among the vegetables. Pour in enough broth or water to come halfway up the meat.
  8. Cover the pot tightly with a lid or foil and transfer it to the oven.
  9. Bake for 3–4 hours, or until the roast is fork-tender and the vegetables are cooked through.
  10. Remove from the oven, rest for 10 minutes, then serve warm with pan juices.
