Ingredients:
3 lbs Halal-certified beef chuck roast
2 tablespoons olive oil
1 large onion, chopped
3 garlic cloves, minced
3 large carrots, peeled and cut into chunks
4 medium potatoes, peeled and quartered
Salt and black pepper, to taste
2–3 cups water or beef broth (low-sodium recommended)
Instructions:
- Preheat your oven to 300°F (150°C) for a low and slow roast.
- In a large oven-safe pot or Dutch oven, heat olive oil over medium heat.
- Season the beef chuck roast with salt and pepper, then sear on all sides until beautifully browned. This locks in flavor and juices.
- Remove the roast and set it aside.
- In the same pot, sauté chopped onions and garlic until fragrant and soft.
- Add the carrots and potatoes, stirring gently for 2–3 minutes to enhance flavor.
- Place the beef roast back into the pot, nestling it among the vegetables. Pour in enough broth or water to come halfway up the meat.
- Cover the pot tightly with a lid or foil and transfer it to the oven.
- Bake for 3–4 hours, or until the roast is fork-tender and the vegetables are cooked through.
- Remove from the oven, rest for 10 minutes, then serve warm with pan juices.
