Ingredients:
For the Korean-Style Meatloaf:
2 lbs ground beef
1/2 cup breadcrumbs
2 large eggs
1/4 cup finely chopped green onions
3 cloves garlic, minced
1/4 cup gochujang (Korean chili paste)
2 tablespoons soy sauce
2 tablespoons brown sugar
For the Sweet & Spicy BBQ Glaze:
1/3 cup gochujang
1/4 cup ketchup
3 tablespoons honey
2 tablespoons rice vinegar
1 tablespoon sesame oil
Instructions:
1. Preheat your oven to 375°F (190°C). Lightly grease a 9×5-inch loaf pan.
2. In a large bowl, combine ground beef, breadcrumbs, eggs, green onions, and minced garlic.
3. Stir in gochujang, soy sauce, and brown sugar. Mix until the ingredients are fully combined.
4. Transfer the meat mixture to your prepared loaf pan and smooth it into an even shape.
5. In a small bowl, whisk together all the BBQ glaze ingredients until smooth.
6. Pour half of the glaze over the meatloaf, saving the rest for basting.
7. Bake for 45–50 minutes, brushing on more glaze every 15 minutes for maximum flavor and caramelization.
8. Once cooked, remove from the oven and let rest for 10 minutes before slicing and serving.
