    Succulent Leg of Lamb with Creamy Mashed Potatoes

The lamb is seared to golden perfection, then slow-roasted in a flavorful mix of garlic and beef broth for unmatched tenderness and taste.     Ingredients:

    2 legs of lamb

    1 tablespoon olive oil

    2 cups beef broth

    3 cloves garlic, minced

    4 cups creamy mashed potatoes

    Instructions:

    1. Preheat your oven to 375°F (190°C).

    2. In a skillet, heat olive oil over medium-high heat. Sear the legs of lamb until golden brown on all sides to lock in the juices.

    3. Transfer the lamb to a roasting pan. Add minced garlic and beef broth for a rich and flavorful base.

    4. Cover with foil and roast for 1.5 to 2 hours, or until the meat is tender and cooked to your liking.

    5. While the lamb roasts, prepare the creamy mashed potatoes by mashing tender potatoes with butter, cream, salt, and pepper until smooth and fluffy.

    6. Let the roasted lamb rest for 10 minutes before slicing.

    7. Serve with a generous portion of mashed potatoes, and drizzle some pan juices over the lamb for extra flavor.
