Succulent Burritos:
Ingredients:
– 1 lb ground beef
– 1/2 cup diced onion
– 2 teaspoons minced garlic
– 1 teaspoon ground cumin
– 1/2 teaspoon salt
– 1/2 teaspoon black pepper
– 4.5 oz diced green chilies
– 16 oz refried beans
– 8 oz tomato sauce
– 10 oz enchilada sauce
– 15 oz chili (beanless)
– 6 large flour tortillas (approximately 12 inches)
– 2 cups shredded lettuce
– 3 cups shredded Mexican cheese blend
– Minced green onions (for garnish)
– Any desired additional toppings
Instructions:
1. Preheat the oven to 400°F (200°C).
2. In a skillet over medium-high heat, brown the ground beef with diced onion until cooked through. Drain excess grease.
3. Stir in minced garlic, ground cumin, salt, black pepper, and diced green chilies. Add refried beans and mix until well combined. Keep warm.
4. In another skillet, combine tomato sauce, beanless chili, and enchilada sauce. Heat over medium heat until warmed through. Set aside.
5. Divide the beef and bean mixture into 6 portions.
6. Place a tortilla on a flat surface and spoon one portion of the beef and bean mixture onto the center.
7. Add shredded cheese and lettuce on top, omitting the lettuce if preferred to keep it crisp.
8. Fold the sides of the tortilla over the filling, then fold the top and bottom sides to enclose the filling like an envelope.
9. Repeat with the remaining tortillas and filling.
10. Place the filled burritos seam side down in two greased 9×13-inch baking dishes.
11. Pour the prepared sauce evenly over the burritos.
12. Sprinkle the remaining shredded cheese over the top.
13. Bake in the preheated oven for 15-20 minutes, until the burritos are heated through and the cheese is melted.
14. Serve hot, garnished with additional lettuce, tomatoes, sour cream, green onions, or preferred toppings. Enjoy your flavorful burritos!
