    Stuffed Pepper Casserole Recipe

     

    Stuffed Pepper Casserole Recipe

    Looking for a hearty and delicious meal? Try this stuffed pepper casserole recipe! Combining the flavors of ground beef, bell peppers, onions, and spices with cheesy goodness, this dish is perfect for a comforting dinner that the whole family will love.

    Ingredients
    – 1 pound ground beef
    – 2 bell peppers, chopped
    – 1 onion, finely chopped
    – 3 cloves garlic, minced
    – 1 tablespoon Worcestershire sauce
    – 1 (15 oz) can low sodium beef broth
    – 1 (15 oz) can diced tomatoes
    – 1 cup uncooked long grain white rice
    – 1 tablespoon Italian seasoning
    – 1 teaspoon salt
    – 1/2 teaspoon black pepper
    – 3/4 cup shredded mozzarella cheese
    – 3/4 cup shredded cheddar cheese

     

    Instructions
    1. Cook the Beef:
    – In a large skillet, cook the ground beef, breaking it apart as it cooks. Once it is mostly cooked, add in the chopped onions and bell peppers. Cook for 5-10 minutes until they start to soften.

     

     

    2. Add Garlic:
    – Add the minced garlic to the beef mixture and cook for a minute or two, just until fragrant.

    3. Combine Ingredients:
    – Stir in the Worcestershire sauce, beef broth, diced tomatoes, uncooked rice, Italian seasoning, salt, and black pepper. Bring the mixture to a boil.

    4. Simmer:
    – Cover the skillet, reduce the heat to a simmer, and cook for about 20 minutes, stirring halfway through.

     

    5. Add Cheese:
    – Once the rice is tender, stir in about half of the shredded cheese until it is melted and incorporated with the beef and rice mixture.

    6. Melt Cheese on Top:
    – Sprinkle the remaining cheese over the top. Cover the skillet and let the cheese melt. For faster melting, place the pan under the broiler (if oven-safe) until the cheese is bubbly and golden.

     

    7. Serve:
    – Remove from heat and serve immediately.

    Tips for the Best Stuffed Pepper Casserole:
    – Use lean ground beef for a healthier option.
    – For extra flavor, use a mix of different colored bell peppers.
    – Make sure to stir the casserole halfway through the simmering time to prevent the rice from sticking to the pan.
