    Strawberry Cheesecake Chimichangas Recipe

    Ingredients:

    8 flour tortillas
    1 cup cream cheese, softened
    ½ cup powdered sugar
    1 tsp vanilla extract
    ½ cup fresh strawberries, chopped
    ¼ cup strawberry jam or preserves
    ½ cup granulated sugar (for coating)
    1 tsp cinnamon (for coating)
    2 cups vegetable oil (for frying)

    Instructions:

    In a medium bowl, mix the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.

    Stir in the chopped fresh strawberries and strawberry jam to create a sweet, fruity cheesecake filling.

    Microwave the flour tortillas for 10-15 seconds to make them more pliable and easy to roll.

    Spread 2–3 tablespoons of the strawberry cheesecake mixture in the center of each tortilla. Fold in the sides and roll tightly to secure the filling.

    In a shallow dish, combine the granulated sugar and cinnamon.

    Heat the vegetable oil in a large skillet over medium-high heat. Carefully place chimichangas seam-side down in the hot oil. Fry 2–3 minutes per side, or until golden and crispy.

    Remove chimichangas from oil and drain on paper towels.
    Immediately roll in the cinnamon-sugar mixture to coat.
