    Stir-Fried Glass Noodles with Cabbage and Egg

     

    This Stir-Fried Glass Noodles with Cabbage and Egg is a quick and delicious dish perfect for busy weeknights. The combination of soft glass noodles, savory scrambled eggs, and tender cabbage creates a flavorful, satisfying meal. With simple ingredients like oyster sauce, soy sauce, and garlic, it’s full of umami goodness. You can customize it by adding protein like chicken or shrimp or spice it up with chili oil. This healthy stir-fry is a great way to enjoy a light yet filling meal!

    Ingredients:

    40g glass noodles (dry)

    2 eggs

    1 cup cabbage (bite-sized)

    2-3 cloves garlic, minced

    1 tablespoon oil

    1 tablespoon oyster sauce

    1/2 tablespoon soy sauce

    1.5 teaspoons sugar

    1/4 teaspoon ground white pepper

    Green onions, chopped (for garnish) optional

    Instructions:

    1. Soak the glass noodles: Place the glass noodles in a bowl of hot water and soak for 5-10 minutes until soft and pliable. Drain and rinse under cold water to prevent sticking.

    2. Prepare the eggs: Beat the eggs with a pinch of salt for flavor.

    3. Heat the wok: Heat a wok or large skillet over medium-high heat and add 1 tablespoon of oil for stir-frying.

    4. Scramble the eggs: Add the beaten eggs to the wok and scramble until cooked through. Once done, remove from the wok and set aside.

    5. Stir-fry the vegetables: Add minced garlic to the wok and stir-fry for 30 seconds until fragrant. Add bite-sized cabbage and stir-fry for 2-3 minutes until slightly softened.

    6. Add the noodles: Add the soaked glass noodles to the wok and stir-fry for 1-2 minutes until heated through.

    7. Season and toss: Add the oyster sauce, soy sauce, sugar, and ground white pepper. Toss everything together to combine all the flavors.

    8. Add the eggs: Return the scrambled eggs to the wok and stir-fry for an additional minute.

    9. Garnish and serve: Garnish with chopped green onions and serve hot for a delicious meal.

    Variations:

    Add protein: Make it a complete meal by adding cooked chicken, tofu, or shrimp for extra protein.

    Spice it up: Add red pepper flakes or a dash of chili oil for a spicy kick.

    Add other vegetables: Feel free to add sliced mushrooms, carrots, bell peppers, or snap peas to enhance flavor and nutrition.
