    Spinach and Cheese Puff Pastry Squares

    These easy Spinach and Cheese Puff Pastry Squares are the perfect flaky, golden appetizer for potlucks, parties, and quick snacks. Made with spinach, ricotta, and mozzarella, this beginner-friendly recipe is nutritious, delicious, and always a crowd favorite.

    Ingredients:

    2 sheets puff pastry (thawed if frozen)
    1 ½ cups cooked spinach, finely chopped (squeeze out excess water)
    1 cup ricotta cheese (or feta for a bolder, tangy flavor)
    ½ cup shredded mozzarella
    1 egg (for filling)
    1 egg for egg wash
    Salt & pepper to taste
    Optional: Sesame seeds for topping

    Instructions:

    Preheat your oven to 375°F (190°C).
    In a mixing bowl, combine the chopped spinach, ricotta (or feta), mozzarella, 1 egg, salt, and pepper. Mix until creamy and smooth.
    Roll out one puff pastry sheet on parchment paper.
    Spread the spinach-cheese mixture evenly over the pastry, leaving a clean border around the edges.
    Place the second puff pastry sheet on top. Seal the edges by pressing with a fork.
    Cut the pastry into squares using a sharp knife.
    Brush the top with egg wash (1 beaten egg).
    Sprinkle sesame seeds if you like.
    Bake for 25–30 minutes, or until golden, puffed, and crispy.
    Let cool slightly and serve warm.
