Ingredients:
2 sheets puff pastry (thawed if frozen)
1 ½ cups cooked spinach, finely chopped (squeeze out excess water)
1 cup ricotta cheese (or feta for a bolder, tangy flavor)
½ cup shredded mozzarella
1 egg (for filling)
1 egg for egg wash
Salt & pepper to taste
Optional: Sesame seeds for topping
Instructions:
Preheat your oven to 375°F (190°C).
In a mixing bowl, combine the chopped spinach, ricotta (or feta), mozzarella, 1 egg, salt, and pepper. Mix until creamy and smooth.
Roll out one puff pastry sheet on parchment paper.
Spread the spinach-cheese mixture evenly over the pastry, leaving a clean border around the edges.
Place the second puff pastry sheet on top. Seal the edges by pressing with a fork.
Cut the pastry into squares using a sharp knife.
Brush the top with egg wash (1 beaten egg).
Sprinkle sesame seeds if you like.
Bake for 25–30 minutes, or until golden, puffed, and crispy.
