    Ingredients:

    1 lb (450g) chicken thighs or breasts, cut into bite-sized pieces

    1 tablespoon olive oil

    1 finely chopped onion

    3 minced garlic cloves

    1 tablespoon ginger, minced

    1 tablespoon curry powder

    1 teaspoon ground cumin

    1 teaspoon paprika

    1 teaspoon turmeric

    1 (14oz) can coconut milk

    1 tablespoon soy sauce

    2 tablespoons fish sauce (optional)

    1 tablespoon brown sugar

    1 cup fresh basil leaves, coarsely chopped

    Salt and pepper to taste

    Cooked jasmine or basmati rice, for serving

    Fresh lime wedges for garnish

    Instructions:

    1. Cook the Chicken: In a large skillet, heat olive oil over medium heat. Add chicken pieces and cook until browned on all sides, about 5 minutes. Remove from skillet and set aside.

    2. Sauté Aromatics: In the same skillet, add onion, garlic, and ginger. Sauté for 3-4 minutes until softened and aromatic.

    3. Add Spices: Stir in curry powder, cumin, paprika, and turmeric. Cook for about 1 minute, allowing spices to toast and release their fragrance.

    4. Create the Sauce: Pour in coconut milk, soy sauce, fish sauce (if using), and brown sugar. Mix well, then add the browned chicken back into the skillet. Let the mixture come to a gentle simmer. Reduce the heat to low, cover, and cook for 15-20 minutes to let the flavors meld.

    5. Incorporate Basil: Stir in fresh basil leaves and let simmer for an additional 2 minutes. Season with salt and pepper to taste.

    6. Serve: Spoon the spicy coconut basil chicken over a bed of jasmine or basmati rice. Garnish with fresh lime wedges for a burst of citrusy flavor.
