    Spicy Cajun Salmon and Shrimp Delight

     

    Spicy Cajun Salmon and Shrimp Delight

    Ingredients:
    – 2 salmon fillets (about 6 oz each)
    – 12 large shrimp, peeled and deveined
    – 1 tablespoon Cajun seasoning
    – 2 tablespoons olive oil
    – 1 red bell pepper, sliced
    – 1 green bell pepper, sliced
    – 1 onion, sliced
    – 3 cloves garlic, minced
    – 1 cup cherry tomatoes, halved
    – 1/4 cup chicken or vegetable broth
    – Salt and pepper to taste
    – Fresh parsley for garnish

    Directions:

    1. Season the seafood: Generously sprinkle Cajun seasoning over both sides of the salmon fillets and shrimp. This spicy blend is key to giving your dish that bold, flavorful kick.

    2. Cook the salmon: Heat 2 tablespoons of olive oil in a large skillet over medium-high heat.

    Add the seasoned salmon fillets and cook for about 4 minutes on each side, until golden and cooked through. Once done, remove and set aside.
    3. Sear the shrimp: In the same skillet, cook the shrimp for about 2 minutes per side, until they turn pink and opaque. Remove and set aside with the salmon.

    4. Sauté the vegetables: In the same skillet, add more oil if necessary, then sauté the sliced red bell pepper, green bell pepper, onion, and minced garlic. Cook for about 5 minutes, or until the veggies begin to soften.
    5. Simmer with tomatoes and broth: Add the halved cherry tomatoes and your choice of chicken or vegetable broth.

    Let everything simmer for about 5 minutes, allowing the flavors to meld together and the vegetables to become tender.
    6. Combine everything: Return the cooked salmon and shrimp to the skillet, and let them warm through in the savory vegetable mixture.
    7. Season to taste: Add salt and pepper as needed. Garnish with freshly chopped parsley for a burst of freshness before serving.
