    Spicy Beef Noodle Soup Recipe

    This Spicy Beef Noodle Soup is the ultimate comfort food tender beef cubes simmered in a rich broth with garlic, ginger, chilies, and chewy noodles. Perfect for cozy nights, this Asian-inspired beef noodle soup is hearty, flavorful, and easy to make at home.

    Ingredients:

     

    1 lb beef chuck (or brisket/flank steak), cut into 1-inch cubes
    8 oz dried thin noodles (egg noodles, wheat noodles, or rice noodles)
    6 cups beef broth (or bone broth for richer homemade beef soup)
    1 tbsp cooking oil
    1 large onion, chopped
    2 cloves garlic, minced
    1 inch fresh ginger, minced
    2–3 dried red chilies, chopped (adjust for spice level)
    1 tbsp soy sauce
    1 tsp brown sugar
    ½ tsp black pepper
    ¼ cup scallions, chopped (reserve greens for garnish)
    1–2 cups leafy greens (napa cabbage, bok choy, or lettuce)
    Optional: 1 tbsp chili oil for extra heat

    Directions:

    1. Sear the Beef: In a large pot or Dutch oven, heat oil and brown beef cubes on all sides. This step locks in flavor for the beef noodle soup base.

    2. Sauté Aromatics: Add onion, garlic, and ginger. Stir until fragrant, then add chopped dried chilies for that signature spicy soup flavor.

    3. Simmer the Broth: Pour in beef broth, soy sauce, brown sugar, and black pepper. Bring to a boil, then reduce heat, cover, and simmer 1–1.5 hours until beef is melt-in-your-mouth tender.

    4. Cook the Noodles: While the broth simmers, cook noodles separately according to package directions. Drain and set aside.

    5. Add Vegetables: Stir in leafy greens and simmer 3–5 minutes until tender.

    6. Assemble & Serve: Add noodles to the pot, stir in chili oil if desired, and ladle your spicy beef noodle soup into bowls. Garnish with scallion greens.
