Spiced Indian Beef Curry Recipe

Ingredients:
Beef Curry:
600 grams beef, cut into medium-sized chunks
2 onions (shallots or brown onions), finely chopped
2 large tomatoes (vine-ripened)
2 tbsp garlic, finely grated or garlic paste
Handful of coriander, roughly chopped
4-5 tbsp cooking oil, ghee, or unsalted butter
1 tsp salt (or to taste)
2 cups warm water (or enough to cover the beef)
Beef Marinade:
½ tsp chili powder
½ tsp turmeric powder
½ tsp garam masala
1 tbsp ginger, finely grated or paste
1 tsp cooking oil
1 tsp salt (or to taste)
Spices:
1 tsp chili powder
1 tsp turmeric powder
1 tsp garam masala
½ tsp coriander powder
1 cinnamon stick
3-4 bay leaves
1 tsp cumin seeds
Instructions:
1. Marinate the Beef:
Cut the beef into equal-sized cubes. Mix the beef with chili powder, turmeric powder, garam masala, ginger paste, cooking oil, and salt. Let it marinate for 15 minutes.
2. Prepare the Base:
Heat a pan over medium heat. Add oil, then toss in cumin seeds, cinnamon stick, and bay leaves. Allow them to sizzle for a few seconds.
3. Cook the Aromatics:
Add the chopped onions and sauté until translucent. Stir in grated garlic and cook until light brown. Next, add chopped tomatoes and cook until softened.
4. Build the Curry:
Add the marinated beef and sprinkle the ground spices (chili powder, turmeric, coriander powder, garam masala). Mix well and cook for 1-2 minutes.
5. Simmer to Perfection:
