    This easy chicken stir-fry recipe is a lifesaver on busy nights! Tender chicken pieces are coated in a flavorful soy-garlic sauce and stir-fried with fresh veggies. It’s a healthy, family-friendly meal that’s customizable with whatever vegetables you have on hand. Serve it over rice or noodles for a complete dinner in minutes.

    Ingredients:
    1 lb boneless, skinless chicken thighs or breasts, cut into bite-sized pieces
    3 tablespoons soy sauce (use low-sodium if desired)
    1 tablespoon sesame oil
    4 cloves garlic, minced
    1 teaspoon fresh ginger, grated (optional for extra flavor)
    1 tablespoon rice vinegar (or another mild vinegar)
    1 tablespoon brown sugar or honey (for sweetness and balance)
    Salt and black pepper, to taste
    2 tablespoons vegetable oil (for stir-frying)
    2 cups mixed vegetables (bell peppers, broccoli, snap peas, or your choice)
    1 tablespoon cornstarch + 2 tablespoons water (slurry for thickening the sauce)

    Directions:

    In a bowl, mix soy sauce, sesame oil, garlic, ginger, vinegar, and sugar/honey. Add chicken pieces and let marinate for 10–15 minutes.

    Heat vegetable oil in a large skillet or wok. Add chicken and stir-fry until golden brown and cooked through.

    Toss in your choice of vegetables and stir-fry until just tender but still crisp.

    Pour in cornstarch slurry and cook for 1–2 minutes until the sauce thickens and coats the chicken and veggies.

    Taste and adjust seasoning with salt and pepper. Serve hot over rice or noodles.
