    Southwest Crock Pot Chicken and Rice

    Warm, bold, and incredibly satisfying this Southwest Crock Pot Chicken and Rice is the ultimate slow cooker comfort food! Made with juicy chicken, wholesome brown rice, and flavorful southwestern spices, this easy one-pot crockpot meal is perfect for busy weeknights, meal prep, or family dinners.

    Ingredients:

    4 boneless, skinless chicken breasts
    1 cup uncooked brown rice
    1 can (15 oz) black beans, drained and rinsed
    1 can (15 oz) corn, drained
    1 can (15 oz) diced tomatoes with green chilies
    1 cup chicken broth
    1 packet (1 oz) taco seasoning
    1 teaspoon garlic powder
    1 teaspoon onion powder
    1 teaspoon cumin
    1 cup shredded cheese (cheddar, Monterey Jack, or Mexican blend)
    Salt and pepper to taste
    Optional toppings: sliced avocado, chopped cilantro, lime wedges, sour cream

    Directions:

    Add the boneless chicken breasts to the bottom of your slow cooker.

    Sprinkle the uncooked brown rice on top, followed by black beans, corn, and diced tomatoes with green chilies.

    In a separate bowl, whisk together chicken broth, taco seasoning, garlic powder, onion powder, cumin, salt, and pepper. Pour evenly over the slow cooker mixture.

    Cook Until Tender:

    On LOW for 6–8 hours, or
    On HIGH for 3–4 hours
    Cook until chicken is fully done and rice is soft and fluffy.

    Remove the chicken, shred it with two forks, and stir it back into the rice mixture.

    Sprinkle cheese over the top and let it melt for about 5–10 minutes.

    Scoop into bowls and top with avocado, cilantro, lime juice, or sour cream for the perfect Tex-Mex finish.
