    Southern-Style Collard Greens with Homemade Cornbread

    Ingredients:

    For the Collard Greens:
    2 pounds fresh collard greens, washed and chopped
    4 cups chicken broth or vegetable broth
    1 small onion, diced
    2 cloves garlic, minced
    1 tablespoon apple cider vinegar
    ½ teaspoon salt
    ½ teaspoon black pepper
    ¼ teaspoon red pepper flakes (optional, for a little heat)
    1 teaspoon smoked paprika (optional, for a smoky flavor)
    1 tablespoon olive oil or butter
    For the Cornbread:
    1 cup cornmeal
    1 cup all-purpose flour
    1 tablespoon baking powder
    ½ teaspoon salt
    1 cup buttermilk
    1 egg
    ¼ cup melted butter

    Instructions:

    In a large pot, heat olive oil or butter over medium heat. Add onion and garlic, sauté until soft and fragrant.

    Pour in the chicken or vegetable broth. Add collard greens a handful at a time, stirring as they wilt.

    Stir in salt, black pepper, red pepper flakes, apple cider vinegar, and smoked paprika (if using).

    Cover and simmer 45–60 minutes, stirring occasionally, until the greens are tender and flavorful.

    Preheat oven to 400°F (200°C) and grease a cast-iron skillet. In a bowl, combine cornmeal, flour, baking powder, and salt.

    Add buttermilk, egg, and melted butter to dry ingredients, mixing just until combined.

    Pour batter into the hot skillet and bake 20–25 minutes, or until golden and a toothpick comes out clean.

    Plate warm collard greens with a slice of cornbread for a comforting Southern meal.
