    Smoked Jalapeño Popper Chicken Bombs

    Smoked Jalapeño Popper Chicken Bombs

    Ingredients:
    – 10 thin boneless skinless chicken breasts
    – 1 pound hot Italian sausage
    – 6 ounces cream cheese
    – 1 ½ cups sharp cheddar cheese
    – ⅓ cup sliced green onions
    – 10 jalapeños
    – 36 ounces of bacon (3 packs)
    – 2 tablespoons Slap Ya Mama Seasoning
    – 1 tablespoon black pepper
    – BBQ sauce for brushing

    Directions:
    1. Preheat the smoker to 250 degrees F to infuse a smoky flavor into your chicken bombs.
    2. Mix the stuffing: In a bowl, combine hot Italian sausage, cream cheese, sharp cheddar cheese, and sliced green onions.
    3. Prepare the jalapeños: Cut off the ends, slice lengthwise, and remove seeds.
    4. Stuff the jalapeños: Fill each half with the sausage and cheese mixture.
    5. Season the chicken: Lay out thin chicken breasts on a parchment-lined baking sheet. Season with Slap Ya Mama Seasoning and black pepper.
    6. Assemble the bombs: Place a stuffed jalapeño on each chicken breast, roll them up, and wrap with bacon, securing with toothpicks.
    7. Smoke the chicken bombs: Place on smoker grates and smoke for about 4 hours, flipping halfway for even cooking.
    8. Add BBQ glaze: Brush with BBQ sauce as they near perfection.
    9. Finish cooking: Continue smoking for 20-30 minutes until the internal temperature reaches 165 degrees F.
    10. Serve: Remove toothpicks and enjoy your flavorful Smoked Jalapeño Popper Chicken Bombs.
