Slow Cooker Whole Chicken with Buttery Herb Potatoes
This Whole Chicken Crockpot Recipe is the ultimate one-pot meal! Juicy, fall-off-the-bone chicken is slow-cooked with buttery red potatoes, aromatic garlic, and a touch of brown sugar for a slightly sweet, savory glaze. Perfect for busy weeknights or meal prep!
Ingredients
Chicken & Vegetables:
1 whole chicken (4-5 lbs.)
1 onion, sliced
1 cup chicken broth (or water)
4 medium red potatoes, washed & pierced
Buttery Herb Rub:
6 tbsp salted butter, softened
1/3 cup brown sugar
1 tsp orange zest
1 tbsp poultry seasoning
1 tbsp parsley, chopped
1 tsp salt & black pepper
2 tbsp minced garlic
Optional:
Chicken dripping gravy (made from drippings)
Instructions
Prep the Chicken & Potatoes
Rinse the whole chicken, removing the cavity bag if present.
Wash potatoes, pierce with a fork, and place at the bottom of the crockpot to act as a trivet. (If too large, cut in half.)
Add Flavor & Seasoning
Pour chicken broth over the potatoes.
Mix the butter rub ingredients and spread generously over the chicken.
If adding extra veggies, slice potatoes into 6-8 pieces and add with baby carrots and onions.
Slow Cook to Perfection
Place the chicken (breast side up) on top of the potatoes.
Cook on LOW for 6-8 hours, until the thickest part of the breast reaches 165°F.
If needed, cook for an additional 30 minutes and check again.
Get Crispy Skin (Optional)
For golden, crispy skin, broil the chicken for 4-6 minutes OR air fry at 400°F for 4-6 minutes.
