2 1/2 pounds boneless, skinless chicken thighs
1/2 red bell pepper, coarsely chopped

1/2 cup packed dark or light brown sugar
1/3 cup ketchup
2 tablespoons soy sauce
1/2 teaspoon crushed red pepper flakes
2 garlic cloves, minced
1 teaspoon finely minced fresh ginger
2 (8-ounce) cans pineapple rings, undrained
1 tablespoon cornstarch

Instructions:
