Slow Cooker Spiced Beef Curry with Coconut Milk

Ingredients:
2 lbs beef chuck or stew meat, cut into cubes
1 tablespoon olive oil
1 large onion, chopped
3 cloves garlic, minced
2 tablespoons fresh ginger, grated
2 tablespoons curry powder
1 teaspoon ground cumin
1 teaspoon turmeric
1/2 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1/4 teaspoon cayenne pepper (optional, for heat)
1 (14 oz) can coconut milk
1 cup beef broth
1/2 cup tomato paste
2 medium potatoes, peeled and diced
Salt and black pepper, to taste
Fresh cilantro, chopped (for garnish)
Instructions:
1. Sauté the aromatics: In a skillet, heat olive oil over medium heat. Add chopped onion and cook until golden and soft, about 5 minutes.
2. Stir in the minced garlic and grated ginger. Cook for 1–2 minutes until fragrant.
3. Add curry powder, cumin, turmeric, cinnamon, cloves, and cayenne pepper (if using). Toast spices for 1 minute to deepen the flavors.
4. Transfer to slow cooker: Pour the spiced onion mixture into your slow cooker. Add the cubed beef, coconut milk, beef broth, tomato paste, and diced potatoes. Stir everything together until well combined.
5. Season with salt and pepper to your taste.
6. Cook low and slow: Cover and cook on LOW for 6–8 hours, or until beef is melt-in-your-mouth tender and the potatoes are cooked through.
7. Garnish & Serve: Top with freshly chopped cilantro. Serve over steamed rice, naan, or on its own.
