    Cornbread Topping
    1 (8.5-oz) box cornbread mix
    1 large egg
    ⅓ cup milk

    Directions:

    Grease the inside of your crockpot with butter or nonstick spray.

    Add potatoes, onion, garlic, salt, pepper, paprika, and herbs. Toss gently.

    Whisk together broth, milk, and melted butter. Pour evenly over the potatoes. Sprinkle cheese on top if using.

    Cover and cook on LOW for 4–5 hours or HIGH for 2–3 hours, until potatoes are fork-tender.

    About 30 minutes before serving, mix cornbread mix, egg, and milk until just combined.

    Gently stir the potatoes once, then spoon cornbread batter evenly over the top without mixing it in.
