    Slow Cooker Poor Man’s Pie Recipe (Hearty Beef, Corn & Mashed Potato Casserole)

This Poor Man’s Pie combines ground beef, corn, and creamy mashed potatoes into a rich, layered dish that’s easy to make and full of flavor.     Ingredients

    • 1 pound ground beef
    • 1 (10.5-ounce) can brown gravy or beef gravy
    • 2 cups frozen or canned corn, drained if canned
    • 4 cups prepared mashed potatoes (from flakes or homemade), seasoned with salt and pepper

    Directions

    1. Brown the beef: In a skillet over medium heat, cook the ground beef, breaking it up with a spoon, until no pink remains (7–10 minutes). Drain excess grease.
    2. Layer the beef: Transfer the browned ground beef to the bottom of a 4- to 6-quart slow cooker and spread evenly.
    3. Add the gravy: Pour the can of brown or beef gravy over the beef and gently stir to coat. Smooth the top for an even base layer.
    4. Add the corn: Spread the corn evenly over the beef layer. Keep the layers distinct so the casserole holds together when serving.
    5. Prepare the mashed potatoes: If using instant flakes or leftover homemade potatoes, season simply with salt and pepper. Spread the mashed potatoes gently over the corn, starting at the edges and working toward the center. Aim for a thick, even layer.
    6. Cook the casserole: Cover and cook on LOW for 4–5 hours or HIGH for 2–3 hours. The pie is ready when hot through, potatoes are lightly browned at the edges, and the gravy is bubbling.
    7. Finish & serve: Turn to WARM, remove the lid for 10 minutes to thicken slightly, then scoop through all layers for servings with beef, corn, mashed potatoes, and savory gravy.
