    Slow Cooker Pineapple Upside-Down Cake

     

    This Slow Cooker Pineapple Upside-Down Cake is a tropical delight that’s as easy as it is delicious! Featuring caramelized pineapple rings and cherries atop a moist yellow cake, it’s the perfect dessert for any occasion. The slow cooker ensures a hassle-free bake with minimal effort. Perfect for parties, family gatherings, or weeknight indulgence, this recipe brings classic flavors to life. Serve warm for a comforting, sweet treat that’s sure to impress!

    Ingredients:

    1 cup packed light brown sugar

    1/4 cup butter, melted

    1 (20-ounce) can pineapple rings in juice (reserve the liquid)

    1 small jar maraschino cherries, drained

    1 box yellow cake mix

    Vegetable oil and eggs as directed on the cake mix box

    Instructions:

    1. Prepare the Slow Cooker: Spray the bottom of a 6-quart slow cooker with nonstick cooking spray.

    2. Create the Caramel Base: Mix brown sugar and melted butter, then spread the mixture evenly on the bottom of the slow cooker.

    3. Add Pineapple and Cherries: Arrange pineapple rings over the sugar mixture. Place a cherry in the center of each ring and in any gaps.

    4. Prepare Cake Batter: Measure the reserved pineapple juice and add enough water to make 1 cup. Use this liquid in place of water when preparing the yellow cake mix as directed on the box.

    5. Combine and Cook: Pour the cake batter over the arranged fruit. Cover the slow cooker and cook on HIGH for 2 to 3 hours, or until a toothpick inserted in the center comes out clean.

    6. Cool and Serve: Remove the slow cooker insert and let the cake cool on a rack for 15 minutes. Carefully invert the cake onto a serving plate to reveal the caramelized pineapple and cherries.
