    This Slow Cooker Parmesan Meatloaf is the perfect blend of hearty flavors and tender texture, making it a family favorite. Packed with ground beef, Parmesan cheese, and aromatic herbs, it’s slow-cooked to juicy perfection. The tangy ketchup glaze adds a classic touch, while optional mozzarella creates a cheesy twist. Ideal for busy weeknights, this hands-off recipe is both comforting and easy to prepare. Pair it with mashed potatoes or roasted veggies for a complete, satisfying meal!

    Ingredients:

    2 lbs ground beef (or ground turkey for a leaner option)

    1 cup breadcrumbs

    1/2 cup grated Parmesan cheese

    1/2 cup milk

    2 large eggs

    1 small onion, finely chopped

    3 cloves garlic, minced

    1 tsp dried oregano

    1 tsp dried basil

    1 tsp salt

    1/2 tsp black pepper

    1/4 cup ketchup (plus more for serving, if desired)

    1/4 cup grated mozzarella cheese (optional, for a cheesy topping)

    Directions:

    1. Mix the Meatloaf Base
    In a large bowl, combine ground beef, breadcrumbs, Parmesan cheese, milk, eggs, onion, garlic, oregano, basil, salt, and pepper. Mix gently until fully combined.

    2. Shape & Place in the Slow Cooker
    Form the mixture into a loaf shape and carefully place it in your slow cooker.

    3. Add the Topping
    Spread ketchup evenly over the top of the meatloaf for a tangy glaze.

    4. Cook Low & Slow
    Cover and cook on low for 6-7 hours, or until the internal temperature reaches 160°F (70°C).

    5. Optional Cheese Finish
    If desired, sprinkle mozzarella cheese on top during the last 15 minutes of cooking for a gooey, cheesy layer.

    6. Rest & Serve
    Let the meatloaf rest for 5-10 minutes before slicing to retain its juiciness. Serve with your favorite sides like mashed potatoes, green beans, or roasted vegetables.
