    Ingredients:

    4 boneless, skinless chicken breasts

    1 can (10.5 oz) cream of mushroom soup

    1 cup chicken broth

    8 ounces sliced fresh mushrooms

    1 small onion, diced

    3 garlic cloves, minced

    1/2 teaspoon dried parsley

    1/2 teaspoon dried thyme

    Salt and pepper to taste

    2 tablespoons cornstarch

    3 tablespoons water

    Fresh parsley, chopped (for garnish)

    Instructions:

    1. Layer the Base:
    Add diced onion, sliced mushrooms, and minced garlic to the bottom of your slow cooker.

    2. Season the Chicken:
    Season chicken breasts with salt, pepper, dried thyme, and parsley. Place them on top of the mushroom-onion mixture.

    3. Prepare the Sauce:
    In a mixing bowl, whisk together the cream of mushroom soup and chicken broth. Pour the sauce evenly over the chicken.

    4. Cook Low and Slow:

    Low Setting: Cook for 6-7 hours.

    High Setting: Cook for 3-4 hours.
    The chicken should be tender and fully cooked through.

    5. Thicken the Sauce:
    About 30 minutes before the end of cooking, mix cornstarch with water in a small bowl. Stir the mixture into the sauce in the slow cooker to thicken.

    6. Serve and Garnish:
    Serve hot, garnished with fresh parsley for a vibrant finish. Pair with rice, mashed potatoes, or steamed vegetables for a complete meal.
