    Slow Cooker Mississippi Beef & Noodles

     

    Transform dinner time with this Slow Cooker Mississippi Beef & Noodles recipe! Featuring tender, juicy beef chuck roast, flavorful ranch and au jus seasoning, and a zesty kick from pepperoncini, this dish is pure comfort in a bowl. The slow cooker does all the work, making it perfect for busy weeknights or cozy weekends. Egg noodles soak up the savory broth, creating a hearty and satisfying meal. It’s easy to make, family-friendly, and sure to become a favorite at your table!

    Ingredients:

    3 lbs beef chuck roast, trimmed of excess fat

    1 packet (1 oz) au jus gravy mix

    1 packet (1 oz) ranch seasoning mix

    1/4 cup butter, sliced

    4 pepperoncini peppers, whole or sliced

    1/4 cup pepperoncini brine (juice from the jar)

    4 cups beef broth

    10-16 oz dried wide egg noodles

    Olive oil

    Chopped fresh parsley for garnish (optional)

    Instructions:

    1. Brown the Beef: Heat olive oil in a skillet, sear the beef until browned, then transfer to your slow cooker.

    2. Season: Sprinkle the ranch seasoning mix and au jus gravy mix over the beef.

    3. Add Flavor: Place the pepperoncini peppers around the beef, pour in the brine, and add beef broth.

    4. Cook: Set the slow cooker to low for 6-8 hours (or high for 5 hours) until the beef is tender and easy to shred.

    5. Shred & Strain: Remove the beef, shred it, and strain the cooking liquid. Return the shredded beef and strained liquid to the slow cooker.

    6. Cook Noodles: Add the dried egg noodles and sliced butter to the crockpot. Cook on high for 30 minutes, stirring occasionally, until the noodles are tender.

    7. Garnish & Serve: Sprinkle with fresh parsley and serve hot.

    Tips for the Best Mississippi Beef & Noodles:

    Spicy Kick: Add sliced jalapeños or crushed red pepper flakes for an extra heat boost.

    Make It Creamy: Stir in a dollop of sour cream for a creamy twist.
