    This Slow Cooker Mediterranean Herb Parmesan Meatloaf is a flavorful and easy-to-make dish, perfect for busy weeknights. Made with ground beef or turkey, Parmesan cheese, and a medley of Mediterranean herbs, it’s both hearty and delicious. The slow cooker ensures the meatloaf stays moist and perfectly cooked, while the optional marinara topping adds a tangy twist. Serve it as a comforting main course paired with roasted vegetables or a fresh salad. It’s a versatile recipe with gluten-free and low-fat options to suit any dietary preference.

    Ingredients:

    1 1/2 pounds ground beef (or ground turkey/chicken)

    1/2 cup grated Parmesan cheese

    1/2 cup breadcrumbs (use gluten-free if needed)

    1/4 cup milk

    1 small onion, finely chopped

    2 cloves of garlic, minced

    1 egg, beaten

    2 tablespoons fresh parsley, chopped

    1 tablespoon dried oregano

    1 teaspoon dried basil

    1 teaspoon salt

    1/2 teaspoon black pepper

    1/2 cup marinara sauce (optional for topping)

    Directions:

    1. In a large mixing bowl, combine the ground beef (or substitute), Parmesan cheese, breadcrumbs, and milk.

    2. Add finely chopped onion, minced garlic, beaten egg, fresh parsley, dried oregano, dried basil, salt, and black pepper. Mix until well incorporated.

    3. Shape the mixture into a loaf and place it in a slow cooker.

    4. If desired, spread a thin layer of marinara sauce over the meatloaf for extra flavor and moisture.

    5. Cover and cook on low for 6-8 hours or high for 3-4 hours, ensuring the internal temperature reaches 160°F.

    6. Carefully remove the meatloaf from the slow cooker and let it rest for a few minutes before slicing.

    7. Serve warm, garnished with additional parsley, if desired.

    Variations & Tips:

    Use ground turkey or chicken for a leaner option.

    Experiment with different herbs like thyme or rosemary for unique flavors.

    Make it gluten-free by substituting breadcrumbs with gluten-free crumbs or ground oats.

    For added veggies, mix in finely chopped bell peppers, spinach, or carrots.
