Slow Cooker Lasagna Soup
This Slow Cooker Lasagna Soup is the perfect one-pot comfort food, packed with rich Italian flavors! Made with ground beef, Italian sausage, tomato sauce, herbs, and gooey cheese, this easy crockpot lasagna soup will be your new favorite weeknight meal.
Ingredients:
2 tbsp tomato paste
14 oz diced tomatoes
2 tbsp balsamic vinegar
1 tsp sugar
½ tsp basil
1 tsp oregano
1 bay leaf
Salt & pepper (to taste)
1 lb ground beef
½ lb Italian sausage
1 small onion, diced
3 cloves garlic, minced
4 cups chicken broth
1 cup pasta sauce
8 lasagna noodles, broken into pieces
For garnish: Mozzarella, ricotta, or parmesan cheese
How to Make Slow Cooker Lasagna Soup:
Brown the meat In a large skillet, cook ground beef, sausage, and onion over medium-high heat. Drain excess fat.
Sauté the garlic Return to heat, add garlic, and cook for 30 seconds.
Add ingredients Transfer to a slow cooker. Stir in chicken broth, tomato paste, diced tomatoes, pasta sauce, sugar, oregano, bay leaf, balsamic vinegar, salt, and pepper.
Slow cook Cover and cook on low for 6-8 hours or high for 3-4 hours until flavors meld.
Add pasta Toss in broken lasagna noodles, cover, and cook for 20-30 minutes until tender.
Garnish & serve Sprinkle with mozzarella, ricotta, or parmesan cheese, and enjoy!
