Slow Cooker Honey Garlic Chicken
Ingredients:
Honey Garlic Sauce:
– 1/3 cup honey
– 1 tablespoon minced garlic
– 1/2 cup low-sodium soy sauce
– 1/4 cup ketchup
– 1 teaspoon dried oregano
Crockpot Chicken and Vegetables:
– 2 lbs bone-in, skin-on chicken thighs
– 1 lb baby red potatoes
– 1 lb peeled carrots
– 1 cup chopped onions
– 1 lb trimmed green beans
– Fresh parsley, chopped for serving (optional)
– Salt and pepper to taste
Cornstarch Slurry (Optional):
– 2 teaspoons cornstarch
– 3 teaspoons water
Instructions:
Step 1: In a small bowl, whisk together garlic, soy sauce, ketchup, honey, and oregano.
Step 2: Place chicken thighs, onions, and carrots in a 4-6-quart slow cooker.
Step 3: Pour honey-garlic sauce over the chicken and veggies.
Step 4: Cover and cook for 3 ½ hours on high heat or 6 to 8 hours on low heat.
Step 5: 20 minutes before cooking time ends, add green beans and optional cornstarch slurry to the slow cooker.
Step 6: Cover and cook for another 15 to 20 minutes until the sauce thickens and green beans are tender.
Step 7: Remove chicken and veggies from the slow cooker and place them on a serving plate.
Step 8: Optionally, broil chicken thighs for 2 minutes for crispier skin.
Step 9: Drizzle sauce over chicken and veggies.
Step 10: Garnish with minced parsley if desired.
Step 11: Serve and enjoy!
