Ingredients:

2 lbs beef stew meat, cut into 1-inch chunks

1/4 cup all-purpose flour

1 tsp kosher salt

1/2 tsp ground black pepper

1 tbsp olive oil

1 medium yellow onion, diced

3 cloves garlic, minced

2 cups low-sodium beef broth

1 tbsp Worcestershire sauce

1 tsp dried thyme

1 tsp smoked paprika

2 bay leaves

8 oz baby bella mushrooms, sliced

1/4 cup heavy cream

2 tbsp chopped fresh parsley (for garnish)

Instructions:

1. Coat the Beef: In a bowl, toss stew meat with flour, salt, and pepper until fully coated.

2. Sear for Flavor: Heat olive oil in a skillet over medium-high heat. Brown the beef in batches, about 3-4 minutes per batch, then transfer to your slow cooker.

3. Build the Base: In the same skillet, sauté onion until soft (3-4 min). Add garlic and cook for 30 seconds. Deglaze with 1/2 cup beef broth, scraping browned bits. Pour into the slow cooker.

4. Add Flavor Boosters: Add remaining beef broth, Worcestershire sauce, thyme, smoked paprika, bay leaves, and mushrooms. Stir gently to combine.

5. Let it Cook: Cover and cook on LOW for 7–8 hours or HIGH for 4–5 hours, until beef is fork-tender.

6. Finish It Off: Stir in heavy cream 15 minutes before serving. Remove bay leaves.

7. Serve & Enjoy: Sprinkle with fresh parsley and serve over mashed potatoes, egg noodles, or rice for the ultimate comfort meal!

Rich, hearty, and soul-warming, this slow cooker beef recipe is a must-try for busy nights or cozy weekends.
