    Slow Cooker Hawaiian Meatballs

     

    These Slow Cooker Hawaiian Meatballs are a sweet and savory dish packed with tropical flavors! Juicy meatballs are slow-cooked with pineapple chunks, bell peppers, and a tangy BBQ sauce, creating a perfect balance of sweetness and spice. Easy to prepare, this recipe is ideal for busy weeknights or a crowd-pleasing party appetizer. Serve them over rice for a hearty meal or with toothpicks for a fun snack. Get ready to transport your taste buds to a Hawaiian paradise!

    Ingredients:

    1 (32 oz) package frozen meatballs

    1 (20 oz) can pineapple chunks (reserve the juice for ultimate flavor)

    1 red bell pepper, diced

    1 green bell pepper, diced

    1 onion, chopped

    1 cup BBQ sauce (sweet and tangy for that tropical kick)

    1/4 cup low-sodium soy sauce

    2 tablespoons brown sugar

    1 teaspoon garlic powder

    1 tablespoon cornstarch

    2 tablespoons water

    Directions:

    1. Load the Slow Cooker: Place the frozen meatballs directly into your slow cooker. No thawing required—save that time for dreaming of Hawaiian beaches!

    2. Add Pineapple & Veggies: Drain the pineapple chunks but keep the juice. Add the pineapple chunks, diced red and green bell peppers, and chopped onion to the slow cooker.

    3. Make the Sauce: In a bowl, whisk together the BBQ sauce, reserved pineapple juice, soy sauce, brown sugar, and garlic powder until smooth.

    4. Combine & Coat: Pour the sauce over the meatballs and veggies, giving everything a gentle stir to coat evenly.

    5. Cook Low & Slow: Cover and cook on low for 4-5 hours or high for 2-3 hours. Use this time to imagine yourself on a tropical island!

    6. Thicken the Sauce: Mix the cornstarch and water to create a slurry. Stir it into the slow cooker during the last 20 minutes of cooking to thicken the sauce to perfection.
