Ingredients:
1 lb ground beef
1 cup white onion, diced
¼ tsp salt
¼ tsp black pepper
2 cups diced potatoes
1 can cream of mushroom soup
1 cup frozen corn
½ cup shredded cheddar cheese (optional)
Fresh parsley for garnish (optional)
Instructions:
1. Brown the beef: In a skillet, cook ground beef and onions until beef is no longer pink. Drain any excess fat.
2. Layer in the slow cooker: Add a layer of potatoes, followed by beef mixture, corn, and spoonfuls of cream of mushroom soup. Repeat layers.
3. Season & cook: Sprinkle salt and pepper, cover, and cook on low for 6–7 hours or on high for 3–4 hours until potatoes are fork-tender.
4. Top & serve: Stir in cheese just before serving, garnish with parsley, and enjoy warm!
