    Ingredients:

    1½ lbs baby potatoes (Yukon Gold or red potatoes)
    4 tbsp unsalted butter, cut into small pieces
    1½ tsp kosher salt
    1 tsp freshly ground black pepper
    1 tsp dried seasoning blend (Italian seasoning, garlic herb, or Herbes de Provence)
    Heavy-duty aluminum foil

    Instructions:

    Set your slow cooker to LOW while you prep. No liquid needed the potatoes will steam inside the foil packets.

    Add baby potatoes to a large bowl. Toss with salt, pepper, and seasoning blend until evenly coated.

    Scatter butter pieces over the potatoes and toss again so every packet gets a buttery finish.

    Cut foil into 12×12-inch squares. Divide potatoes evenly, placing them in the center of each piece. Seal tightly into packets.

    Place packets seam-side up in the slow cooker. Cover and cook:
    LOW: 4–5 hours
    HIGH: 2–3 hours
    Until potatoes are fork-tender.

    Carefully open packets (hot steam!). Serve directly or transfer to a bowl with the melted butter juices spooned over the top.
