    Slow Cooker Creamy Beef Stroganoff Recipe

     

    This Slow Cooker Creamy Beef Stroganoff is a comforting, hearty dish perfect for busy nights. Tender beef is slow-cooked with mushrooms, garlic, and a rich blend of sour cream and cream cheese for a velvety, flavorful sauce. Serve it over egg noodles, mashed potatoes, or rice for a classic, satisfying meal. Easy to prepare and bursting with flavor, it’s a family favorite that’s sure to impress. Ideal for cozy dinners or meal prepping!

    Ingredients:

    1 ½ – 2 pounds stew meat

    2 teaspoons Italian seasoning

    Salt and pepper (I used about 1 teaspoon salt and ½ teaspoon black pepper)

    2 cups beef broth (low sodium recommended)

    1 cup fresh sliced mushrooms

    3 tablespoons Worcestershire sauce

    1 tablespoon minced garlic

    1 tablespoon Dijon mustard

    1 cup sour cream

    6 ounces cream cheese (cut into 1-inch cubes, softened)

    4 tablespoons cornstarch (or flour) + ½ cup beef broth

    12 ounces short pasta noodles (egg noodles, penne, macaroni, or spiral pasta all work well)

    Instructions:

    1. Prep Your Slow Cooker:
    Lightly grease your slow cooker. Add stew meat and sprinkle with Italian seasoning, salt, and pepper.

    2. Layer in Flavor:
    Add sliced mushrooms, beef broth, minced garlic, Dijon mustard, and Worcestershire sauce. Cover and cook on low for 8–9 hours for melt-in-your-mouth tenderness.

    3. Thicken the Sauce:
    About 30 minutes before serving, whisk together ½ cup beef broth with cornstarch or flour. Stir this mixture into the slow cooker.

    4. Make It Creamy:
    Add sour cream and softened cream cheese. Turn the heat to high and cook for another 20–30 minutes, stirring occasionally until the sauce is smooth, creamy, and thickened.

    5. Serve & Garnish:
    Taste the stroganoff, adjusting salt and pepper if needed. Stir in your cooked pasta noodles. Garnish with cracked black pepper and fresh thyme for a burst of flavor.
