Slow Cooker Corned Beef and Cabbage
Make this tender, flavorful corned beef and cabbage in your crockpot for the perfect comfort meal! Just set it and forget it!
Ingredients:
3–4 lb corned beef brisket with spice packet
1 small head of cabbage, cut into wedges
6 small red or gold potatoes, halved
3 large carrots, cut into chunks
1 onion, quartered
3–4 cups beef broth or water
2 bay leaves
1 teaspoon black peppercorns
Fresh parsley for garnish
Instructions:
1. Prep the crockpot: Place the onions, potatoes, and carrots at the bottom of the crockpot.
2. Add the meat: Place the corned beef brisket (fat side up) on top of the vegetables. Sprinkle the spice packet, bay leaves, and black peppercorns over the meat.
3. Add liquid: Pour in enough beef broth or water to cover the brisket about ¾ of the way.
4. Slow cook: Cover and cook on LOW for 8–10 hours or HIGH for 4–5 hours.
5. Add cabbage: During the last 2 hours of cooking, add the cabbage wedges on top.
6. Slice and serve: Let the corned beef rest for 10 minutes before slicing against the grain. Serve with the tender cabbage, potatoes, and carrots.
