    This Slow Cooker Chicken Scampi is a simple yet elegant dish perfect for weeknight dinners or special occasions. Tender chicken breasts are coated in a light flour mixture, paired with colorful bell peppers, and simmered in a flavorful garlic-lemon sauce. The slow cooker does all the work, ensuring the chicken stays juicy and delicious. Top it off with fresh parsley and Parmesan for a finishing touch. Serve over pasta, rice, or with crusty bread for a complete, satisfying meal!

    Ingredients:

    4 boneless, skinless chicken breasts

    1/4 cup all-purpose flour

    1/2 teaspoon salt

    1/4 teaspoon black pepper

    1/4 cup olive oil

    5 cloves garlic, minced

    1 red bell pepper, thinly sliced

    1 yellow bell pepper, thinly sliced

    1/2 cup chicken broth

    1/4 cup fresh lemon juice

    1 teaspoon Italian seasoning

    1/4 cup fresh parsley, chopped

    1/4 cup grated Parmesan cheese

    Instructions:

    1. Prep the Chicken: In a resealable plastic bag, mix flour, salt, and pepper. Add the chicken breasts and shake until coated evenly.

    2. Sear the Chicken: Heat olive oil in a skillet over medium heat. Brown the chicken on both sides (about 3-4 minutes per side). Transfer to the slow cooker.

    3. Sauté the Veggies: In the same skillet, sauté minced garlic and sliced bell peppers until slightly tender. Add them to the slow cooker.

    4. Make the Sauce: In a bowl, mix chicken broth, lemon juice, and Italian seasoning. Pour over the chicken and veggies in the slow cooker.

    5. Cook Low and Slow: Cover and cook on low for 4-5 hours until the chicken is tender and flavorful.

    6. Finish with Freshness: Before serving, sprinkle the dish with fresh parsley and grated Parmesan cheese for a burst of flavor.

    Tips & Variations:

    Add Heat: Mix in red pepper flakes with the Italian seasoning for a spicy kick.
    Seafood Twist: Add shrimp during the last 30 minutes of cooking for a surf-and-turf vibe.
