Tender chicken thighs are simmered in a creamy coconut milk and mild curry sauce, then paired with green beans and soft egg noodles. Ingredients:

For the Slow Cooker:

600 g skinless, boneless chicken thighs

1 onion, peeled and chopped

3 cloves garlic, peeled and crushed

2 tsp fresh ginger, crushed or paste

3 tbsp mild curry powder

400 ml reduced-fat coconut milk

1/2 tsp chili flakes (optional)

1/2 tsp salt

100 g mango chutney

To Serve:

250 g dried egg noodles

300 g green beans, trimmed and halved

200 ml chicken stock

Instructions:

1. Prepare the Slow Cooker:
Add chicken thighs, onion, garlic, ginger, curry powder, coconut milk, chili flakes (if using), salt, and mango chutney to the slow cooker.

Cook on HIGH for 2.5 hours or LOW for 5.5 hours until the chicken is tender and easily shredded.

2. Add Noodles and Vegetables:
Stir in the dried egg noodles, green beans, and chicken stock. Mix well to combine.

Cook on HIGH for 30 minutes until the noodles are soft and green beans are tender.
