    Slow Cooker Chicken Noodles Recipe

     

    This Slow Cooker Chicken Noodles recipe is a comforting and flavorful one-pot meal that’s perfect for busy weeknights. Tender chicken thighs are simmered in a creamy coconut milk and mild curry sauce, then paired with green beans and soft egg noodles. It’s easy to prepare, family-friendly, and customizable with your favorite vegetables. With minimal prep and maximum taste, it’s an ideal dish for meal prep or quick dinners. Serve it fresh or reheat with ease for a hearty, satisfying meal.

    Ingredients:

    For the Slow Cooker:

    600 g skinless, boneless chicken thighs

    1 onion, peeled and chopped

    3 cloves garlic, peeled and crushed

    2 tsp fresh ginger, crushed or paste

    3 tbsp mild curry powder

    400 ml reduced-fat coconut milk

    1/2 tsp chili flakes (optional)

    1/2 tsp salt

    100 g mango chutney

    To Serve:

    250 g dried egg noodles

    300 g green beans, trimmed and halved

    200 ml chicken stock

    Instructions:

    1. Prepare the Slow Cooker:
    Add chicken thighs, onion, garlic, ginger, curry powder, coconut milk, chili flakes (if using), salt, and mango chutney to the slow cooker.

    Cook on HIGH for 2.5 hours or LOW for 5.5 hours until the chicken is tender and easily shredded.

    2. Add Noodles and Vegetables:
    Stir in the dried egg noodles, green beans, and chicken stock. Mix well to combine.

    Cook on HIGH for 30 minutes until the noodles are soft and green beans are tender.

    Pro Tips & Variations

    Chicken Choice: Use chicken thighs for juicy, shreddable meat. Breasts are an option but may be drier.

    Onion & Garlic Hack: Save time by using frozen chopped onion or jarred garlic and ginger paste.

    Curry Spice: Stick to mild curry powder for a kid-friendly dish, or spice it up with medium or hot curry powder.

    Noodles: Dried egg noodles are ideal as they absorb the rich sauce perfectly.

    Vegetables: Green beans are classic, but you can substitute with peas, carrots, or your favorite mix.

    Thickening Sauce: If the sauce is too runny, stir in a slurry of 1 tbsp cornflour mixed with 2 tbsp water before serving.

    Storage & Reheating

    Leftovers: Store in an airtight container in the fridge for up to 3 days.

    Reheat: Add a splash of water or chicken stock while reheating to prevent drying out.
