Slow Cooker Chicken in Mushroom Sauce
Ingredients:
4 chicken thighs
250 ml chicken broth
300 g mushrooms (such as button mushrooms or porcini), sliced
2 tbsp olive oil
1 onion, chopped
2 cloves garlic, minced
1 tsp dried thyme
Salt and pepper to taste
Fresh parsley for garnish
Directions:
1. In a skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sauté until softened (about 2-3 minutes).
2. Season the chicken thighs with salt and pepper. Sear them in the skillet for 2-3 minutes per side until lightly browned (optional, but enhances flavor).
3. Transfer the chicken thighs to the slow cooker.
4. Add the sliced mushrooms, sautéed onion and garlic, dried thyme, and chicken broth to the slow cooker. Stir gently to combine.
5. Cover and cook on low for 6-7 hours or high for 3-4 hours, until the chicken is tender and cooked through.
6. Before serving, taste the sauce and adjust seasoning if needed.
7. Serve the chicken with the mushroom sauce spooned over the top and garnish with fresh parsley.
