Ingredients:

3-4 boneless skinless chicken breasts (or chicken thighs)

½ cup water

1 tablespoon flour

1 (15-ounce) can diced tomatoes

½ cup sliced mushrooms

½ cup kalamata olives

¼ cup capers

1 tablespoon minced garlic

1 teaspoon salt (adjust to taste)

¼ teaspoon black pepper (adjust to taste)

2 teaspoons Italian seasoning

8 ounces thin spaghetti noodles

2 ½ cups chicken broth

2 cups fresh baby spinach (packed)

12 ounces tomato paste (one 12-ounce can or two 6-ounce cans)

Instructions:

1. Prepare the Slow Cooker: Lightly grease the slow cooker. Add water and whisk in flour until smooth.

2. Layer Ingredients: Arrange chicken breasts or thighs in a single layer. Top with diced tomatoes, mushrooms, kalamata olives, capers, minced garlic, salt, black pepper, Italian seasoning, and chicken broth.

3. Cook Low and Slow: Cover and cook on low for 6-7 hours or high for 3-4 hours, until the chicken is tender and infused with flavor.

4. Add Pasta and Greens: Uncover and stir in spaghetti noodles, fresh spinach, and tomato paste. Cover again and cook for an additional 15-20 minutes, or until noodles are cooked to your liking.
