    Looking for a healthy breakfast casserole packed with protein, veggies, and cheese? This Slow Cooker Cheesy Spinach and Egg Casserole is the perfect make-ahead dish for busy mornings, weekend brunches, or meal prep! It’s a low-carb, high-protein breakfast recipe that’s easy to make and incredibly delicious.

    Ingredients:

    10 large eggs

    1 cup milk

    1 tsp salt

    ½ tsp black pepper

    2 cups fresh spinach, roughly chopped

    1 cup shredded cheddar cheese

    1 cup shredded mozzarella cheese

    1 can (14 oz) diced tomatoes, drained

    1 tsp dried oregano

    1 tsp dried basil

    ½ tsp garlic powder

    Cooking spray or butter (for greasing the slow cooker)

    Directions:

    1. Lightly grease your slow cooker with cooking spray or butter to prevent sticking.
    2. In a large bowl, whisk together the eggs, milk, salt, and pepper until well combined.
    3. Stir in spinach, cheddar, mozzarella, tomatoes, oregano, basil, and garlic powder.
    4. Pour the egg mixture evenly into the greased slow cooker.
    5. Cover and cook on LOW for 4 to 5 hours, or until eggs are set and the top is golden.
    6. Allow the casserole to cool slightly before serving for easier slicing and better texture.
    7. Serve warm, scooping portions directly from the slow cooker perfect for a crowd or brunch table!
