Ingredients for Cheeseburger Soup:
1 lb ground beef
1 medium onion, chopped
3 cups potatoes, peeled and diced
1 cup carrots, chopped
1 cup celery, chopped
4 cups chicken or beef broth
1 tsp garlic powder
1 tsp dried basil
½ tsp black pepper
½ tsp salt, or to taste
2 cups shredded sharp cheddar cheese
1 cup heavy cream or milk
2 tbsp cornstarch (optional, for thickening)
How to Make Crockpot Cheeseburger Soup:
1. Brown the Ground Beef:
In a skillet over medium heat, cook the ground beef until fully browned. Drain excess fat and transfer the meat to your slow cooker.
2. Add Veggies and Broth:
To the crockpot, add diced potatoes, carrots, celery, onion, broth, garlic powder, basil, salt, and pepper.
3. Slow Cook Until Tender:
Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until vegetables are fork-tender.
4. Add Cheese and Cream:
Stir in shredded cheddar cheese and cream (or milk). For extra thickness, whisk cornstarch with a bit of water and add it to the soup. Cook an additional 20–30 minutes on HIGH until rich and creamy.
5. Serve Hot and Enjoy:
Taste and adjust seasoning if needed. Serve warm, optionally topped with more cheese, chopped green onions, or parsley.
