    Slow Cooker Butter Garlic Asparagus and Mushrooms

    This Slow Cooker Butter Garlic Asparagus and Mushrooms recipe is a simple yet flavorful side dish perfect for any occasion. The tender asparagus and earthy mushrooms are coated in a rich, buttery garlic sauce that’s both comforting and delicious. Fresh lemon juice and parsley add a zesty, vibrant finish to the dish.     Ingredients:

    1 pound asparagus, trimmed and cut into 2-inch pieces

    8 ounces mushrooms, sliced

    4 tablespoons butter, melted

    4 cloves garlic, minced

    1 teaspoon salt

    1/2 teaspoon black pepper

    1 lemon, zested and juiced

    1 tablespoon fresh parsley, chopped

    Directions:

    1. Add the asparagus and mushrooms to your slow cooker.

    2. In a small bowl, mix together the melted butter, minced garlic, salt, and pepper.

    3. Pour the buttery garlic mixture over the vegetables, tossing gently to coat evenly.

    4. Cover and cook:

    Low: 3-4 hours

    High: 1.5-2 hours
    until the vegetables are tender.

    5. Just before serving, drizzle with fresh lemon juice, sprinkle with lemon zest, and garnish with chopped parsley for a burst of freshness.
